Whip An Impressive Easter Sunday Lunch With Three Butchers Hong Kong

While waiting, make the mint sauce by mixing chopped mint, sugar, salt, wine vinegar and hot water. Season to taste.

Enjoy an Easy, Romantic Lamb Shank Dinner for Two with Three Butchers Hong Kong

Start by preheating your oven. Place 2 to 3 smoked ancho-chillies, a large handful of raisins, and 285ml of apple juice into a bowl. Set this aside for later.

Once the onions have softened, take your bowl of raisins, chillies, and apple juice and dump into a food processor or liquidiser. Process until you have a paste, and mix this in with the onion mix.

Take the lamb shanks out of the oven and turn the heat down to 140C. Add the lamb shanks to the casserole pan, add a 400g tin of tomatoes, and add 750ml of water or chicken stock. Stir everything together, cover, and stew in the oven for about 2.5 to 3 hours. Check on it regularly and add water or chicken stock as needed to keep the lamb from drying out.

Once the meat is falling off the bone and the sauce appears thick, your lamb shanks are ready! Take it out of the oven, taste it and add any salt and pepper if needed. Finish off with a dash of red wine vinegar.

For a complete meal, serve the lamb shanks with flatbread, steamed veggies, or garlic butter mashed potatoes.
